This Victorinox filleting knife from the Fibrox collection has a flexible, slim 18 cm blade and is perfect when slicing thin pieces of most types of meat. Chicken or duck for instance, or spare ribs. The blade is thick enough to handle these types of tasks. Please note: you shouldn’t cut through the bones. This flexible filleting knife fits inside the 4.0898 sheath.
